Chocolate Ingredients

The chocolate ingredient used is one of the highest quality available from the Callebaut Factory located in Weize, Belgium. The milk and dark chocolate is of a particularly high quality, manufactured specifically for use by Bernard Callebaut.

A good quality chocolate should have a minimum of 31% cocoa butter . The cocoa and cocoa butter content of our chocolate far exceed industry standard.
• Bernard Callebaut bitter sweet chocolate – 72% cocoa / 42% cocoa butter
• Bernard Callebaut semi sweet chocolate – 60% cocoa / 37% cocoa butter
• Bernard Callebaut milk chocolate – 35% cocoa / 34% cocoa butter

According to the Food and Drug Administration, the term "white chocolate" can only be used if cocoa butter content is present in the ingredients. Bernard Callebaut white chocolate contains 27% cocoa butter.

Other Ingredients

The centers (fillings) developed in our factory consist of 48 different types with an additional 20 seasonal fillings offered at special times throughout the year. We only use the highest quality ingredients when producing the centers.

• Fresh whipping cream and sweet butter – from Alberta, Canada, famous for dairy products
• Hazelnuts – from Turkey
• Almonds – from California
• Walnuts – from France
• Marzipan and praline – from Belgium

Master Chocolatier Bernard Callebaut

Growing up in Belgium, Bernard Callebaut was destined to become a chocolatier. It was in the town of Wieze, Belgium that he nurtured a passion for chocolate – with his roots in the then family-owned Callebaut Chocolate Factory.

Notably, he is the first Callebaut to pioneer the creation of individual handmade chocolates. With dedication to quality, and innovative craftsmanship, he is also renowned for his unique style in chocolate fillings. As a Master Chocolatier, Bernard Callebaut has made his vision a reality creating a balance of taste and style.

Bernard Callebaut has brought worldwide recognition to his craft. Throughout the years, many accolades have been bestowed upon him with career highlights that include:

• 1996 - Invited as an honored guest to attend the "Festival International du Chocolat" (International Festival of Chocolate) – Montelimar, France.
• 1996 - Inducted into the "Confrerie Du Nougat", and the "Ordre International de la Grastronomie Francaise" by the French National Committee of Gastronomy. This award is granted by the French Government to individuals recognized for their outstanding contribution to the culinary arts.
• 1997 - Awarded the honorable "Prix d’Excellence" for overall score in the International Festival of Chocolate – Epinal, France.
• 1998 Awarded the prestigious title of "Grand Prix International Artisan Chocolatier" – the highest award in the competition – International Festival of Chocolate – Roanne, France, the last time the competition was held.
